Herb-Infused Turkey Wings
If you are craving a tender turkey dish packed with savory herbs, these herb-infused turkey wings are the answer. In particular, a blend of seasonings, fresh vegetables, and a slow braise in chicken stock turns out wings that are juicy and full of flavor. They are right at home on a comfort food table with my shredded pulled pork two ways and my honey bacon balsamic roasted Brussels sprouts.
With this in mind, the prep is minimal: season the wings, set them on a bed of onion and green pepper, add the liquid, cover, and let the oven do the work. What is more, a short uncovered bake at the end gives the skin a little crispness. I love them with sautéed asparagus and mushrooms or a winter salad.
As a result, this recipe is not only easy enough for a weeknight but also special enough for a holiday. Furthermore, if you are planning a bigger menu, see my guide on how to host a holiday dinner party and my ideas for what to do with Thanksgiving leftovers.
What Are Herb-Infused Turkey Wings?
Herb-infused turkey wings are turkey wings rubbed with olive oil and a seasoning blend of garlic, onion, poultry seasoning, paprika, parsley, and thyme, then baked covered in chicken stock and water over sliced onion and green pepper. The slow, covered bake makes the meat tender, and a final uncovered bake crisps the outside.
Ingredients (With Purpose & Flavor Notes)
- Turkey wings (5): Meaty and rich, they turn tender with a slow bake.
- Extra virgin olive oil (2 tablespoons): Helps the seasoning stick.
- Salt, onion powder, garlic powder, and poultry seasoning (1 tablespoon each): The savory base of the rub.
- Paprika and parsley (2 teaspoons each): Add color and flavor.
- Dried thyme (1 teaspoon): A classic herb with poultry.
- Yellow onion (1/2, sliced) and green pepper (1, sliced): A bed of vegetables that flavors the wings and the pan juices.
- Chicken stock (1 1/2 cups) and water (1 cup): Create a moist cooking environment so the wings stay juicy.

How To Make Herb-Infused Turkey Wings
Step 1: Heat the Oven
Preheat the oven to 325°F.
Step 2: Season the Wings
In a small bowl, mix the salt, onion powder, garlic powder, poultry seasoning, paprika, parsley, and thyme. Drizzle the olive oil over the turkey wings and massage it in. Season both sides generously, pressing the seasoning into the meat.
Step 3: Prepare the Pan
Arrange the sliced onion and green pepper in the bottom of a large casserole dish. Lay the seasoned wings on top.
Step 4: Add the Liquids
Pour the chicken stock and water into the pan, around the wings and not over them, so the seasoning stays in place.
Step 5: Cover and Bake
Cover the pan tightly with foil. Bake for 1 1/2 to 2 hours, until the wings are tender, basting with the pan liquid every 15 to 20 minutes.
Step 6: Uncover and Crisp
Remove the foil, raise the oven to 375°F, and bake for 10 more minutes.
Step 7: Rest and Serve
Let the wings rest for a few minutes, then serve with your favorite sides.
Herb-Infused Turkey Wings
Ingredients
- 5 Turkey Wings
- 1/2 Medium Yellow Onion sliced
- 2 tbsp Extra Virgin Olive Oil
- 1 tbsp Salt
- 1 tbsp Onion Powder
- 1 tbsp Garlic Powder
- 1 tbsp Poultry Seasoning
- 2 tsp Paprika
- 2 tsp Dried or Fresh Parsley
- 1 tsp Dried Thyme
- 1 cup Water
- 1 1/2 cup Chicken Stock
- 1 Green Pepper sliced
Instructions
- Preheat the Oven: Preheat your oven to 325°F (165°C).
- Season the Turkey Wings: In a small bowl, mix together the salt, onion powder, garlic powder, poultry seasoning, paprika, parsley, and thyme. Drizzle the extra virgin olive oil over the turkey wings and massage it into the meat. Generously season both sides of the turkey wings with the seasoning mixture. Be sure to press the seasoning into the wings to make sure every part is flavorful.
- Prepare the Pan: In a large casserole dish pan, arrange the sliced onions and sliced green pepper at the bottom. These will infuse the turkey wings with extra flavor as they cook. Then, lay the seasoned turkey wings on top of the onions and peppers.
- Add the Liquids: Pour the chicken stock and water into the pan, ensuring you don’t pour it directly over the turkey wings (to keep the seasoning intact). The liquid will help create a moist cooking environment for the turkey wings, keeping them tender and juicy.
- Cover and Bake: Cover the pan tightly with aluminum foil and place it in the preheated oven. Bake for 1.5 to 2 hours or until the turkey wings are tender. Be sure to baste the wings in the cooking liquid about every 15 to 20 minutes to ensure they stay moist and flavorful.
- Uncover and Crisp the Wings: After the turkey wings are tender, remove the aluminum foil from the pan. Increase the oven temperature to 375°F (190°C) and bake for an additional 10 minutes. This step will help create a slight, crispy crust on the wings, giving them extra texture and flavor.
- Serve! Once done, remove the turkey wings from the oven and let them rest for a few minutes. Serve them with your favorite sides like mashed potatoes, rice, or steamed vegetables. Enjoy the savory flavors of these perfectly cooked herb turkey wings!

Frequently Asked Questions
How do I know the wings are done?
The meat should be tender and pull easily from the bone, and poultry should reach 165°F.
Why keep the pan covered?
The foil traps steam, which keeps the wings moist during the long bake.
Can I use an aluminum pan?
Yes. A large disposable aluminum pan works well.
Can I use only chicken stock?
Yes. Replace the water with more stock for a richer flavor.
