Fried U.S. Catfish Nugget Crostini with Remoulade Sauce

The holiday season can be overwhelming, but that doesn’t mean your appetizers have to be. When entertaining during the holidays, I prefer appetizers that are rich in flavor without consuming too much preparation time. I aim for simplicity without compromising taste. During the colder months, savory ingredients like US Farm-Raised Catfish offer an opportunity to get creative. My recipe for Fried Catfish Nugget Crostini with Remoulade Sauce is both savory and straightforward.This recipe can be used for Friendsgiving, Thanksgiving or NYE. What I love most about this recipe is so simple to create and the crunches of the catfish compliments the saltiness of the remoulade sauce. I garnished a few with some lemon *chef kiss*.

Fried Catfish Nugget Crostini with Remoulade Sauce
Yield: About 12 servings
Ingredients:
For the Crostini:
12 slices of baguette, about 1/2-inch thick
1-2 tbsp olive oil
1 garlic clove, halved
Salt to taste
Store-bought remoulade sauce

For the Catfish
Preheat an air fryer to 400 degrees F (200 degrees C).
Rinse and dry the catfish with a paper towel before coating.
Add the seasoned breading to a shallow bowl, and then dip each piece of fish until coated completely.
Spread out nuggets on a baking sheet and spray with non-stick cooking spray.
Place nuggets in an even layer in the air fryer basket, sprayed side down.
Air fry for 8 minutes.
Flip nuggets over and cook for 4 minutes

Instructions: 
Prepare the Crostini:
a. Preheat your oven to 375°F (190°C).
b. Arrange the baguette slices on a baking sheet.
c. Lightly brush both sides of each slice with olive oil.
d. Sprinkle a little salt over the slices.
e. Toast in the oven until golden brown and crisp, about 10 minutes.
f. Once out of the oven and still warm, rub the garlic clove over one side of each toasted slice.

Assemble
a. Spread a generous layer of the remoulade sauce on half of the crostinis slice (6) .
b. Place a fried catfish nugget on top.
c. Drizzle or dollop a small amount of remoulade sauce over the nugget if desired.
