Recipe: Lactose-Free French Toast & Berries

I am partnering with my friends at The Dairy Alliance for this tasty lactose-free French toast recipe.
This recipe is so simple to create.  But before you get started, my most helpful tip to give you is to not allow the bread to get too soggy because your results definitely won’t be as spectacular as they could be.
You can garnish your French toast with any type of berries.  I chose strawberries and blueberries.  And I also added a hint of powdered sugar. This recipe is ideal to make for breakfast with the family, or brunch if you’re hosting a shindig for friends, and you can never go wrong making this recipe for dinner.

This French toast can be paired with bacon, sausage, home fries, or eggs, or just feel free to enjoy this dish solo. 
Lactose-free milk is milk from cows but without lactose.  Lactose is a protein that many people have trouble digesting, and lactose-free milk is an alternative for people with lactose sensitivity.  Lactose-free milk is really easy to substitute in recipes and is very similar to using dairy milk. It also makes recipes more smooth and creamy. When using lactose-free milk, the brand doesn’t matter because it has the same nutrients as regular dairy milk. The only thing missing is, of course, the lactose, which you won’t mind missing at all.  You won’t even be able to tell the difference that lactose-free milk was used. See how to make this recipe:

French Toast With Blueberries & Strawberries 
Ingredients 

1½ teaspoons of real vanilla extract

1 teaspoon butter

1 cup strawberries

1 cup blueberries

powdered sugar

pinch of salt

8 slices of Texas toast (thick-sliced bread)

2 large eggs

1 cup lactose-free milk

Directions

Preheat a large skillet, or griddle, over medium-low heat.

Using a large bowl, beat eggs with vanilla extract, milk, cognac, and salt.

Melt butter on skillet/griddle.

Place bread into the batter to coat one side.

Flip over and repeat with the other side.

Note:  (You do not want to soak the bread, just have each side coated well with the batter.)

Place on griddle/skillet until nicely browned, usually about one minute per side.

Garnish with powdered sugar, syrup and your choice of berries.
