I would love to tell you I had a profound story creating these lobster roll sliders using Vinal Havensmoked Lobster. I don’t. Lobster rolls are classic, and if you improve on them too much, they lose the familiarity people want in a roll. Two things (plus bacon) make this a must-serve at any summer party: Sliders are summer-friendly, and asking someone to commit to a full-size roll of a rich seafood like lobster and mayo is a lot during swimsuit season. The other reason this roll is successful is the addition of one of my favorite condiments, roasted garlic mayo. I can’t describe why this is so perfect, but with very little effort you can create a sauce that with tastes professional.
