Ingredients
- 6 cups mixed salad greens
- 1 cup fresh blackberries
- 2 logs goat cheese
- 1/2 cup panko breadcrumbs
- 1/4 cup all-purpose flour
- 2 large eggs, beaten
- 1/4 cup olive oil for frying goat cheese
- 1/4 cup balsamic vinegar
- 2 tbsp honey
- salt and pepper at your choice for taste
Instructions
- In a small bowl, whisk together the balsamic vinegar and honey.
- Set aside.
- Take each blackberry and gently rinse them under cold water.
- Pat them dry using a paper towel and set aside.
- In separate bowls, place the flour, beaten eggs, and panko breadcrumbs.
- Slice goat cheese 1/-1/2 rounds.
- Take the sliced goat cheese and roll it in the flour, making sure it is fully coated.
- Then dip it in the beaten eggs, allowing any excess to drip off.
- Finally, roll the cheese in the panko breadcrumbs, pressing lightly to ensure an even coating.
- Repeat with the remaining goat cheese pieces.
- Heat the olive oil in a frying pan over medium heat.
- Once the oil is hot, add the coated goat cheese rounds and fry for about 1-2 minutes on each side, or until golden brown and crispy.
- Remove the fried goat cheese from the pan and transfer them to a plate lined with paper towels to drain any excess oil.
- In a large salad bowl, combine the mixed salad greens and blackberries.
- Drizzle the balsamic vinegar and honey mixture over the salad and toss gently to coat.
- Divide the salad onto individual plates or bowls and top each serving with a few pieces of fried goat cheese.
- Season the salad with salt and pepper to taste.
- Please NOTE: **You can also drizzle some additional balsamic vinegar over the top if desired.**
