Pastichio With Feta Cheese
1/2 lb. macaroni, cooked and drained
1/4 cup butter, melted
1/2 lb. feta cheese, crumbled
2 cups milk
3-4 eggs, well-beaten
bread crumbs
Grated cheese (kefalotiri)
 
Grease 10-inch square baking pan with butter and sprinkle with bread crumbs and grated cheese. Combine macaroni with melted butter and crumbled feta cheese. Place in pan and sprinkle top with read crumbs and grated cheese. Add milk to well-beaten eggs, then carefully pour over macaroni. Sprinkle top with more grated cheese. Bake in hot oven (350 degrees) for 30 minutes, or until top is lightly browned. (The moistened layer of bread crumbs and grated cheese forma soft crust when baked.) Makes 5 servings.
