Strawberry Lemonade Fruit Pop Mocktail

Homemade lemonade poured over a strawberry fruit pop for an easy, alcohol-free summer drink.

Ingredients
  

For the Lemonade

  • 3/4 cup lemon juice approximately 4 to 5 lemons
  • 7 1/4 cups water
  • 1 1/4 cups sugar
  • 3 cups ice

For the Mocktails

  • 8 strawberry fruit pops one per glass; I used Whole Fruit
  • ice for the pitcher
  • mint and lemon slices for garnish

Instructions
 

  • Wash, roll and squeeze the lemons until you reach 3/4 cup of juice (approximately 4 to 5 medium lemons). You can use bottled lemon juice to replace or supplement the fresh juice. Set aside.
  • Slice the squeezed lemons and set aside.
  • In a large pot over medium heat, add the water and sliced lemons. Bring to a slight boil, about 8 minutes.
  • Add the sugar and stir until dissolved.
  • Pour the sugar water through a strainer into a pitcher to catch any lemon seeds and pulp.
  • Add the fresh lemon juice and stir. Add the ice.
  • Chill for 2 to 4 hours in the refrigerator, or overnight.
  • To make the mocktails, pour the lemonade into a pitcher with ice. Garnish the wine glasses with mint and lemon slices.
  • Place a fruit pop in each glass at an angle and pour the lemonade on top. Serve immediately.

Notes

You can also use store-bought lemonade. To make it a cocktail, add your favorite alcohol; I love vodka with lemonade.
