Pancake Platter with Homemade Pancakes
A breakfast board built around homemade pancakes, with baked bacon, fresh berries, bananas, whipped cream, chocolate chips, sprinkles and warm maple syrup.

For the Homemade Pancakes
- 2 cups self-rising flour
- 1/2 cup sugar
- 1/2 teaspoon baking powder
- 2 cups milk
- 2 eggs
- 3 tablespoons butter melted
- 1 tablespoon apple cider vinegar
- 1 tablespoon vanilla
For the Platter
- 1 pack bacon
- 3 bananas sliced
- 1 cup blueberries
- 1 cup raspberries
- 1 cup strawberries sliced
- 1 cup chocolate chips
- 1 cup sprinkles
- 1 cup maple syrup warmed
- 1 stick butter for serving
- 1 container whipped cream
Set out a wooden board and six small bowls that fit on the board.
Rinse the fruit and slice the strawberries. Place the strawberries, raspberries and blueberries in small bowls. Set aside.
Bake the bacon at 375°F until slightly crispy.
Make the pancake batter. In a large bowl, whisk together the self-rising flour, sugar and baking powder. In a second bowl, whisk together the milk, eggs, melted butter, apple cider vinegar and vanilla. Pour the wet ingredients into the dry ingredients and stir until just combined.
Heat a lightly buttered griddle or skillet over medium heat. Pour the batter onto the griddle and cook until bubbles form on the surface and the bottom is golden. Flip and cook until the second side is golden. Repeat with the remaining batter.
Arrange the pancakes in the center of the board and add the bacon. Slice the bananas and add them to the board.
Add the remaining fruit, sprinkles, chocolate chips and whipped cream.
Serve with butter and warm maple syrup.
