Ingredients
  

  • 16 oz Italian sausage mild, spicy, or sweet — see notes
  • 8 oz rigatoni pasta
  • 1 tbsp olive oil
  • ½ yellow onion minced
  • 2 tbsp pre-minced garlic
  • ½ tsp red pepper flakes
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 1/2 cups heavy cream
  • 1 cup shredded Parmesan cheese plus more for serving
  • Fresh parsley for garnish

Instructions
 

  • Bring a large pot of salted water to a boil. Cook rigatoni according to package directions until al dente. Drain and set aside.
  • While the pasta cooks, heat olive oil in a large skillet over medium-high heat. Add sausage, onion, garlic, red pepper flakes, salt, and black pepper. Cook, breaking up the sausage, until no longer pink — about 6 to 8 minutes.
  • Drain any excess fat from the skillet if necessary and return the sausage mixture to the pan.
  • Reduce heat to low. Add heavy cream and stir to combine. Add Parmesan cheese and stir until melted and a smooth sauce forms.
  • Add the cooked rigatoni to the skillet and toss to coat evenly in the sauce.
  • Serve immediately topped with extra Parmesan and fresh parsley.
