8ozrigatoni pasta
1tbspolive oil
½yellow onion minced
2tbsppre-minced garlic
½tspred pepper flakes
½tspsalt
½tspblack pepper
1 1/2cupsheavy cream
1cupshredded Parmesan cheeseplus more for serving
Fresh parsleyfor garnish
Instructions
Bring a large pot of salted water to a boil. Cook rigatoni according to package directions until al dente. Drain and set aside.
While the pasta cooks, heat olive oil in a large skillet over medium-high heat. Add sausage, onion, garlic, red pepper flakes, salt, and black pepper. Cook, breaking up the sausage, until no longer pink — about 6 to 8 minutes.
Drain any excess fat from the skillet if necessary and return the sausage mixture to the pan.
Reduce heat to low. Add heavy cream and stir to combine. Add Parmesan cheese and stir until melted and a smooth sauce forms.
Add the cooked rigatoni to the skillet and toss to coat evenly in the sauce.
Serve immediately topped with extra Parmesan and fresh parsley.
