Meats
- 3 oz prosciutto
- 3 oz salami
- 3 oz pepperoni
Cheeses
- 4 oz brie cut into wedges
- 4 oz sharp cheddar cubed
- 4 oz gouda sliced
Fruit, Nuts and Extras
- 1 apple thinly sliced
- 1 pear thinly sliced
- 2 cups red and green grapes
- ½ cup pecans
- ½ cup walnuts
- ¼ cup almonds
- ½ cup dried apricots
- ¼ cup dried cranberries
- ¼ cup cornichons
- 2 tbsp honey
- 4 oz crackers about 1 sleeve
- fresh rosemary sprigs and a mini white pumpkin for garnish
Choose your board. Start with a large, clean wooden board or platter with room to layer.
Add the meats. Fold, roll or ribbon the prosciutto, salami and pepperoni and place them in a few spots around the board.
Anchor with cheese. Arrange the brie, cheddar and gouda evenly around the board to give it structure.
Place the bowls. Set small bowls of honey and cornichons on the board.
Layer the fruit. Slice the apple and pear just before serving and tuck them in with the grapes.
Fill the gaps. Fill open spaces with the nuts, dried apricots and cranberries, then fan the crackers along the edges.
Garnish and serve. Finish with rosemary sprigs and a mini pumpkin, and let the cheese sit out for 20 to 30 minutes before guests arrive.
How much to buy: Plan on about 1½ ounces of meat and 2 ounces of cheese per person when the board is an appetizer.
