Chambord Sweet Thyme Cocktail
A holiday cocktail with Chambord, Irish whiskey, pineapple juice, and a homemade caraway maple syrup, garnished with thyme and a berry.

Cocktail
- 1.5 ounces Slane Irish Whiskey
- .75 ounce Chambord Liqueur
- .75 ounce caraway maple syrup
- .75 ounce fresh pineapple juice
- ice
- pineapple wedge, thyme sprig, and a berry for garnish (strawberry, blueberry, blackberry, or raspberry)
Caraway Maple Syrup (makes enough for 10 cocktails)
- 6 ounces water
- .5 ounce fresh thyme
- .5 ounce caraway seeds
- 1/8 teaspoon salt
- 4 ounces pure maple syrup
Make the syrup: In a small saucepan, bring the water, thyme, caraway seeds, and salt to a boil. Cover and remove from the heat.
Once the mixture has cooled, strain it through a fine sieve, then add the maple syrup. Keep refrigerated for three to four weeks.
In a shaker tin, combine the whiskey, Chambord, caraway maple syrup, and pineapple juice with ice.
Shake well.
Strain into a rocks glass over fresh ice.
Garnish with a pineapple wedge, a thyme sprig, and a berry.
