- 6 slices bacon, thick cut
- 1½ pounds fresh brussels sprouts, halved
- 3 tbsp olive oil, separated
- ¾ tsp kosher salt
- ½ tsp ground black pepper
- 2 tbsp balsamic vinegar
- 2 tsp honey
Preheat the oven to 425°F (or 218°C).
Cook the bacon in a large skillet over medium-high heat until crispy. Tear into bite-size pieces, then set aside.
Line a baking sheet with parchment paper.
Trim off the outer, dry leaves of the brussel sprouts, cut the bottom off, and slice them lengthwise.
In a large bowl, toss the halved brussels sprouts with two tablespoons of olive oil, kosher salt, and freshly cracked black pepper to coat them thoroughly.
Transfer the brussels sprouts to a baking sheet and roast until tender and caramelized, about 20 minutes.
Place caramelized brussels sprouts back in the bowl. Add the remaining tablespoon of olive oil, bacon balsamic vinegar, and honey and toss to coat evenly.
Taste and season with kosher salt if necessary and serve.
