Fall Inspired Mimosa

- 1 bottle (750 ml) Prosecco or Champagne, chilled Brut preferred
- 1½ cups chilled juice of choice (pear, apple, cranberry, pomegranate, or white grape) about 2 oz per glass
Garnishes
- Fresh cranberries
- Rosemary sprigs
- Caramel sauce, for the rims
- Brown sugar, for the rims
- Apple slices
- Pear slices
- Cinnamon sticks
Chill the juice and the sparkling wine thoroughly.
If rimming, dip the glass rims in caramel, then in brown sugar. Do this while the glasses are dry.
Fill each flute with about 2 oz of juice, roughly a third of the glass.
Top slowly with Prosecco or Champagne, pouring down the inside of the glass to preserve the bubbles.
Finish with one intentional garnish and serve immediately.
Set this up as a mimosa bar for a crowd: juices in carafes, bottles on ice, garnishes in small bowls. One 750 ml bottle pours about six glasses.
