Creamy Spinach Dip

Ingredients
  

  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 10 ounces fresh spinach leaves
  • 1 tsp minced garlic
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup grated Parmesan cheese
  • cups shredded mozzarella cheese, divided
  • 1 tbsp chopped parsley
  • crostini, crackers, and vegetables, for serving

Instructions
 

  • Steam or sauté the spinach until wilted. Let cool slightly, then squeeze out all excess moisture. Coarsely chop.
  • Preheat oven to 375°F. Coat a small baking dish or oven-safe skillet with cooking spray.
  • In a large bowl, combine cream cheese, sour cream, spinach, garlic, salt, pepper, Parmesan, and ¾ cup mozzarella. Mix until well blended.
  • Transfer mixture to prepared dish and top with remaining ¾ cup mozzarella.
  • Bake for 20 minutes, until bubbly and cheese is melted.
  • Switch oven to broil and cook 2–3 minutes, just until the top begins to brown.
  • Sprinkle with parsley and serve warm with crostini, crackers, or vegetables.
