Champagne Berry Popsicle

- 1 bottle champagne chilled
- 1 cup strawberries thinly sliced
- 1/2 cup raspberries
- 1/2 cup blueberries
- 2 tbsp simple syrup or more to taste
- 1/2 cup lemonade optional; for a softer fruitier version
Remove the tops from the strawberries and thinly slice them.

Evenly divide the strawberries, blueberries, and raspberries among the popsicle molds.

In a pitcher, gently stir together the chilled Champagne and simple syrup.

Slowly pour the Champagne mixture into each mold, filling to the top and making sure the fruit is fully submerged.

Insert popsicle sticks.
Freeze for at least 6 hours, or until completely firm.
To release, briefly run warm water over the outside of the molds before serving.
