Champagne Berry Popsicle

These elegant Champagne popsicles are light, refreshing, and perfect for warm-weather entertaining, summer soirées, and celebratory gatherings.

Ingredients
  

  • 1 bottle champagne chilled
  • 1 cup strawberries thinly sliced
  • 1/2 cup raspberries
  • 1/2 cup blueberries
  • 2 tbsp simple syrup or more to taste
  • 1/2 cup lemonade optional; for a softer fruitier version

Instructions
 

  • Remove the tops from the strawberries and thinly slice them.
    1 cup strawberries
  • Evenly divide the strawberries, blueberries, and raspberries among the popsicle molds.
    1/2 cup raspberries, 1/2 cup blueberries, 1 cup strawberries
  • In a pitcher, gently stir together the chilled Champagne and simple syrup.
    1 bottle champagne, 2 tbsp simple syrup
  • Slowly pour the Champagne mixture into each mold, filling to the top and making sure the fruit is fully submerged.
    1 bottle champagne
  • Insert popsicle sticks.
  • Freeze for at least 6 hours, or until completely firm.
  • To release, briefly run warm water over the outside of the molds before serving.
