Preheat your oven to the temperature indicated on the puff pastry package (usually around 400°F)
Roll out the thawed puff pastry sheet onto a lightly floured surface. Cut the pastry into small squares, approximately 2x2 inches in size.
Place a small cube of Brie cheese in the center of each pastry square.
Add a small dollop (about 1/2 teaspoon) of fig jam or preserves on top of the Brie cheese.
Gently fold the corners of the pastry square towards the center, forming a little bundle or pouch. Pinch the edges together to seal the pastry.
Place the filled pastry bites on a baking sheet lined with parchment paper.
Bake in the preheated oven for about 12-15 minutes, or until the pastry turns golden brown and puffs up.
Once the bites are done, remove them from the oven and let them cool slightly.
If desired, garnish each bite with a few fresh rosemary sprigs for added flavor and presentation.
Serve and enjoy! These mini fig & brie bites can be enjoyed on their own or paired with a side of additional fig jam for dipping.
