In a small bowl, whisk together the balsamic vinegar and honey.
Set aside.
Take each blackberry and gently rinse them under cold water.
Pat them dry using a paper towel and set aside.
In separate bowls, place the flour, beaten eggs, and panko breadcrumbs.
Slice goat cheese 1/-1/2 rounds.
Take the sliced goat cheese and roll it in the flour, making sure it is fully coated.
Then dip it in the beaten eggs, allowing any excess to drip off.
Finally, roll the cheese in the panko breadcrumbs, pressing lightly to ensure an even coating.
Repeat with the remaining goat cheese pieces.
Heat the olive oil in a frying pan over medium heat.
Once the oil is hot, add the coated goat cheese rounds and fry for about 1-2 minutes on each side, or until golden brown and crispy.
Remove the fried goat cheese from the pan and transfer them to a plate lined with paper towels to drain any excess oil.
In a large salad bowl, combine the mixed salad greens and blackberries.
Drizzle the balsamic vinegar and honey mixture over the salad and toss gently to coat.
Divide the salad onto individual plates or bowls and top each serving with a few pieces of fried goat cheese.
Season the salad with salt and pepper to taste.
Please NOTE: **You can also drizzle some additional balsamic vinegar over the top if desired.**
